Cane sugar, in solid form, obtained by open air evaporation of cane-sugar juice, without centrifugation, whose content of sucrose by weight, in the dry state, corresponds to a polarimeter reading of 69° or more but not more than 85°, and whose reducing sugar content, expressed as dextrose on the dry substance, is 4.5 % or more but not more than 15 %. The product contains natural anhedral microcrystals, of irregular shape, not visible to the naked eye, which are surrounded by residues of molasses and other constituents of sugar cane.
